Always dreamed of making risotto like a true Italian nonna? Join head chef Schalk Vlok for a hands-on workshop celebrating the art of risotto, with golden farm-grown pumpkin as the star. The experience begins outdoors with farmer Ian de Villiers, who leads a stroll to Babylonstoren’s rice paddy where our own carnaroli rice is cultivated. Learn about the rice’s fascinating life cycle, traditional flooding methods and hand-harvesting techniques.

Back in the kitchen, chef Schalk demonstrates how to prepare a rich, velvety pumpkin risotto from scratch, using classic Italian methods. Building on this base, a selection of seasonal risotto variations will be created and tasted. The focus is on local ingredients, perfectly grown risotto rice and how pumpkin’s natural sweetness and texture can elevate every spoonful.
